In drag racing you want a clutch that will:

a) Hold high power
b) Not get glazed surfaces, lowering coefficient of friction
b) Allow you to slip it as much as humanly possible

Multi plates are very high clamp load pressure plates with a larger contact surface area to soak up more torque, meaning they are more slippable yet hold higher power as the friction material is very grabby and the pressure plate is stiff.
